In 1893, Bertha Palmer tasked the Palmer House pastry chef Joseph Sehl with a dessert suitable for ladies attending the Chicago World’s Columbian Exposition. Her request was simple, a cake-like confection that could easily be transported to the fair within a boxed lunch. The result was the Palmer House Brownie, made of chocolate to comprise a fudge-like density and topped with a decadent walnut and apricot glaze. The dessert first published reference as “the brownie” following the World’s Columbian Exposition of 1893, was when it appeared in the Sears Roebuck Catalog published in Chicago in 1898.

After befriending Claude Monet, Bertha began decorating the Palmer House with paintings and other French artwork, eventually accumulating the largest collection of impressionist art outside of France. The Palmer House was adorned with garnet-draped chandeliers, Louis Comfort Tiffany masterpieces, and a breathtaking ceiling fresco by French painter Louis Pierre Rigal. The fresco was described by columnist George Will as “a wonderful protest of romance against the everydayness of life.” By the 1920s, the decision was made to erect a new 25-story building.

Between 1924 and 1927, the Palmer House was rebuilt on the same site but in stages, so not to lose a single day of operations. The hotel was purchased in 1945 by legendary hotelier Conrad Hilton and it remains one of the company’s flagship properties. President Grant was married to Bertha Palmer’s sister Ida, and in 1879, the hotel hosted the “Greatest Banquet in American History” to commemorate the return of the President’s trip from around the world. A gala was hosted for 500 dignitaries and Civil War heroes, including General William Sherman and Phillip Sheridan, with Mark Twain, Potter’s friend, as master of ceremonies. The brownie was created in the Palmer House Kitchen, specifically under the direction of Bertha Palmer to be served at the World’s Columbian Exposition, or Chicago World’s Fair, in 1893. Bertha, who was president of the Ladies Board for Managers for Exposition, was creating box lunches for the Women’s Pavilion. She asked her chef to prepare a dessert, something more unique than a piece of pie or cake, and something that would be easy to eat and transport.

He later became a dry-goods store owner in Chicago where he revolutionized the retail trade. He was the first to make large window displays, to use big advertising spaces, to send goods on approval to homes and to hold bargain sales. He became a brilliant hotel man as he applied his successful department store methods to the operation of his hotel. He saw no reason why clerks, chefs and head waiters should not be subject to the same discipline as floorwalkers and counter-jumpers.
